Happy Holidays!

This holiday season we are serving the Austin area with classic Thanksgiving and Christmas dishes with a Cajun/Creole twist.

Deep Fried Chicken ($12 per pound pre prep) – Deboned Chicken, rubbed with Cajun butter, then stuffed with either: boudin, crawfish boudin (extra dollar per pound), or jambalaya; deep fried in soybean oil. Chickens are usually around 5-6 pounds before deboning.

 

Crawfish Cornbread Dressing ($50)– Cornbread dressing mixed with the holy trinity and crawfish tails. Spice levels can be high in this dish, so please specify your level of desired heat. Can be made with Tasso or Andouille Sausage as substitute.

 

Green Bean Casserole ($40) – Made with fresh green beans, our housemade cream of mushroom soup, and with a blend of cheddar and pepper jack cheeses; baked until melted and creamy. Bacon or Tasso can also be added (additional $5)

 

Broccoli Cheese and Rice Casserole ($45) – Made with fresh broccoli, our housemade cream of mushroom soup, and with a blend of cheddar and pepper jack cheeses; baked until melted and creamy.

 

Dirty Rice Dressing ($40) –  Made with ground beef, dark roux, scallions, and long grain rice. Packed with Cajun seasoning.

 

Corn and Tasso Maque Choux ($40) – Made with sweet corn, bell peppers, and jalapeno (tomatoes optional). A succotash that can be made with a Cajun or Creole twist. Tasso can be omitted for vegetarian preference.

Corn Pudding ($45) - Made with sweet corn, heavy cream, poblano peppers, onions, garlic, flour, eggs. A savory baked corn soufflé

Collard Greens ($30 per quart) – A hearty side dish made with fresh collard greens, bacon, and onions. Savory with a vinegar finish.

 

Bacon Jalapeno Mac and Cheese ($40) – Macaroni mixed with a mornay sauce, bacon and pickled jalapenos, baked. Bacon or Jalapenos are optional.

 

Backbone Gravy ($15 per pint)– Rich gravy made with pork backbone stock, a perfect accompaniment to your chicken or mashed potatoes. Backbone meat can be included if desired.

 

Mashed Potatoes ($35) – Mashed until a creamy finish. Can be made with sweet potatoes

 

Potatoes au Gratin ($45) – Sliced potatoes baked with leeks, heavy cream, and cheese.

All holiday items are served in 9”x13” aluminum pan, unless specified on the menu.

All items on our regular menu are also available. This includes:

Chicken and Andouille Gumbo, Shrimp or Crawfish Etouffee, Jambalaya, Red Beans and Rice, White Beans and Rice, and Sauce Piquante with chicken or gator.
